This is one of my go-to recipes for a quick vegetable side, especially handy as cabbages can last a long time in your refrigerator. Cooking cabbage brings out its natural sweetness, balanced here by a lashing of cider vinegar. I especially like this dish paired with sausages, duck confit, or fatty roasts.
1 green or red cabbage (about 2 pounds)
1 cup warm water
2 tablespoons cider vinegar
2 teaspoons kosher salt
1 tablespoon duck fat or unsalted butter
1 teaspoon fennel seeds
Freshly ground black pepper
